It removes everything that made them originally good, if they grew up in modern times they would not be Dolores, or Isabela, or Luisa. They'd be completely different people in modern times which is why the film is set in like 1920 at the latest hidden in Choco's mountains. Isabela already knowing what she wants and keeping it hidden doesn't flow quite as well as her big breakout moment of realizing she CAN choose anything she wants, and starts to open up to the possibilities. You've already got Dolores fulfilling the part where she pines for a relationship the family decided isn't for her
