Actual newbie here, what are the greater Gundam entries? I have only watched 0079 and Zeta
The main continuity is 0079, Zeta, ZZ, and then Char's Counterattack movie, mainly because they are direct sequels to each other, carry on most of the same character and themes, and were made in the span of about ~10 years. It's not that it was intended to be this long of a story from the very beginning, but it kinda flows like that since it's roughly made in order that way.
Everything else is either standalone story or even alternative universe story, or is positioned as a tie-in sequel/prequel to something else but is relatively optional because it's a different story plot or has different cast of characters or are exploring different themes. Many of these are worth watching especially if you like different takes on the same story elements or if you want to see the setting fleshed out in different ways. E.g., The Gundam stories called 0080 War in the Pocket, 0083 Stardust Memory, and 08th MS Team are three different OVA series made in 1989, 1991, and 1996, they're often grouped together because they take place around the time of 0079 and before Zeta, and they all focus on characters who aren't special psychics but enlisted soldierspilots. The stories have more of a military theme and somewhat more grounded battles.
99% of people with strong online opinions about eva don't actually care or think much about eva, they have strong opinions about the fandom and the image of the person who likes it.

It really is the best, but it's built so heavily on the social dynamics of the characters that it doesn't surprise me some autists can't get more out of it than cool battles and religious symbolism.
Some of those are better than eva legitimately, But deft is not most anime fans strong suit.
