If you scored a beautiful red head who was the sole super big fan of you, you'd be "MUH BETTY" too.
Simon was cool as a character until Betty became recurring and the way all of that was handled. Fionna & Cake is the last place you should look for a good Simon storyline, which sucks because the original show pretty much just fricked him over with an empty ending losing her because she was so badass she saved the world by fusing with god leaving him alone, so if you actually wanted any resolution for him you're stuck with the worst AT content by far.
She's an annoying self-insert.
I wonder if that's exactly the reason why he turned out the way he did in Fionna and Cake.
Because there was so little about him and even fewer cameos of him as himself, they didn't know how to build up his character for F&C, since his only connections we're aware of and have been made come from either Betty or Marceline, this is also the only time he actually gets a ton of screen time in a consistent way rather than one off episodes or flashbacks.

Honestly I liked him better as Ice King. His character peaked when they combined the two personas
literally nothing would have or could have made me more happy than if adventure time ended with magic betty accepting the ice king as himself and the two of them living happily together, as two crazy, magic weirdos.
Ice kings character would have come full circle, to being obsessed with capturing princesses due to Simons loss of Betty, to eventually cooling down and becoming less crazy about kidnapping princesses, to eventually having his princess, betty, come back to him in a way where they both love each other but neither of them remember why
do you all forget that basically simon is a prisoner inside the madness of crown, Ice king is not simon, is more of a manifestation of the wishes of the crown, That scenario that you describe is Simon getting cuck by the Ice king
Betty's love would help bring Simon out of the Ice King.
Simon and Ice King would become one person, not two.
