The only actual food deserts are small island nations that rely heavily on canned shit from Australia to deliver to them and the stuff we toss out or give to dogs.
I'd say it's just more convenience, though if you really do for the cheapest, crappiest food you'd probably bloat up fast, like eating gas station food, etc. The gap has definitely narrowed since everything's expensive in particular, but healthy stuff also involves more food prep and (relative) cooking ability considering a lot of people are afraid of cooking for some reason. We try to buy good quality meat and grow our own veggies when we can, buying fruits and vegetables otherwise.
