ATLA is misleading because the finale itself wound up being really good, but I agree that the whole final act needed a bit more room to breathe. Having the failed invasion act as the third season finale with a fourth season dedicated to the heroes regrouping and rallying would've been ideal.
The finale sucked, and the whole mystery was resolved way too quickly for it to be satisfying. While I understand Hirsch's frustration with Disney, it really needed that third season.

The episodes were enjoyable (even the Painted Lady and Daydreams and Nightmares), but they didn't feel all that necessary, apart from showing that the Gaang couldn't just fly into the Fire Nation in a day, and that the people there were actual people
I guess it's cheating to say with the recent reboot, but 90s Beavis and Butt-Head. It ended on the highest possible note of quality, with the show only getting better season to season.

It's not a total clean wrap up of all their ideas and possible plot threads, but they don't end the series with everyone still a thousand miles away from safety nor do they reach Sydney then invent a new conflict to tease more eps that never come
