Your best bet is to go with something general like math or CS and then just network until someone gives you a job.
Science and engineering have been dead for decades if not going into medicine. you always could have studied something like accounting where there is a lot of industry jobs and the government is always hiring
If you're premed you should stay far the frick away from science and engineering though, all med schools admissions care about is your gpa, the major does not matter at all, and so picking a hard one is basically self-sabotage.

The show overall depicts an entirely different world though. It both shows that theres always another shoe thats going to drop as well as there always being a light at the end of the tunnel. Richie's entire character arc in S2 is about how he found his purpose in a world where he felt ancillary. Everybody in the second season goes through this to an extent as well, even Carmy. The introduction to Claire shows us a person who's also in a mentally draining and demanding job, but she is still able to see through the bullshit and effortlessly help those around her. To call this show an accurate depiction of "millenial doomerism and self-destructive bullshit" would be an incredibly shallow critique to put it lightly.
