She had money, and already some adventure under her belt. What she never had was real love, and she found him.
I mean, he was just a janitor but he's still a hard working man and honorable. I can kind of see why he sparked some interest in her. Shame he only started confidence maxing at the end of the second movie. That would have helped him a lot sooner.

I mean certain people would complain about how the women are represented.
The movie is a truly solid masterpiece, with a lot of good vibes, making the most of the screen time it has. It has no major songs, though there is one musical moment during the opening credits that helps build the mood better than many other foreground attempts could have.
Bernard and Bianca are a truly excellent team; the likes of which Disney and Pixar are almost completely incapable of making anymore because of their toxic foolhardy production and current writers.
Bernard and Bianca support each other, being strong when the other is weak, encouraging when the other is falling. They compliment each other's strengths. Bernard is strong without feeling bull-headed. He is tactical while not feeling too intelligent. Bianca is delicate and feminine, but still fully capable of rushing into danger and the dirt to do the necessary deeds. This is demonstrated when she rushed over a chasm in near darkness to grab and save Bernard. He had already returned saving her before, and honestly by the end the movie they are equal. This feels earned, natural, and not forced.
The mice's chemistry is pleasant and lovely to see, and like mentioned their supporting each other is excellently done.
One more thing...
Interestingly, this movie is one of the few Disney movies with a religious moment.
Penny desperately prays, explicitly to God. (Notably NOT to some generic sense of fate or sending prayers meaninglessly out into the bland cosmos.) In perfect symbolic response to (the Christian) God's character, He responds by subverting expectations by sending two tiny mice to help. Not a mighty hero, or fully grown adult, not even another child. This like with God's choice of picking the youngest shepherd boy to be king, or having His be born in a manger be where His only son is born. Thus He sent two little mice, who are instrumental in saving the day. (Whether one like this religious element or not, the symbolic application is apt and on point.)
(The only other I can recall being Robinhood. Friar tuck is portrayed as a kindly helpful person while trying to demonstrate restraint, until his the sheriff literally stealing the donations from the church's poor-box enrage him. He rebukes the sheriff by physically ejecting him from the church while shouting "GET OUT OF MY CHURCH!" He then proceeds to righteously beat the greedy corrupt sheriff. Later when the Friar is rescue from awaiting execution, he explicitly says on screen, "My prayers have been answered. Thank the Lord.")
The original is better than Down Under.
