The whole premise is that Forrest, the most unlikely of people, influences/is touched by nearly all the major historical events of the decades. AIDS became a big deal in the 80s because of some celebrity deaths that drew awareness to it. It makes sense for her to die of AIDS because of her lifestyle and because of the premise of the film. She may have contracted it after Little Forrest was born, so there is no need for Forrest or his son to have AIDS as well. It would be a waste of a major character death to have her die of hep C or some other unknown virus when AIDS was so important in the 80s.
The one that made the screenplay (Roth) wanted the supposed sequel to have the kid have AIDS and see the whole AIDS scare thing.
It was hepatitis. I looked into it many years ago out of curiosity and there were a number of interviews that clearly stated it to be the case. AIDS still enough of a social topic that casually injecting it into a movie like this without context or the reality of the people suffering wouldve been a bit much.
It got overshadowed by the AIDS "outbreak", but hepatitis for that generation is actually a pretty serious problem. That specific strain of hepatitis was identified roughly around the same time. It travelled around people with the same risk patterns so there was a lot of confusion.
