They do mention in the movie her name which means she does speak to them or has spoken in the past.
at least that's the case of pic related, most of the time in these scenarios you can leave it as them having different languages, although a lot of times they do speak the same (Lion King, Madagascar, Jungle Book as biggest examples) They just are very different cultures.
Just because she has a name that she's referred to by doesn't mean that's her actual name. If there's a creature out there killing your kin you figure out what to call it pretty quick so you can warn people about it, even if you have to make shit up.
For all we know Sabor's actual name is Leslie.

The truth is simple - herbivores are seen as cuddly and non-threatening by us, so it's easy to make them the protagonists, while predators can be easily turned into brainless monsters.

That's not how it works.
Humans didn't develop brain matter by chewing on grass, it was cooked meat that made the real difference.
There's not a lot of intelligence difference between mammalian predators and prey species on average. Some predators are particularly smart, but so are elephants for example.
There are plenty of movies where the carnivores speak or are even the protagonists. This is hardly a trend and more of a case by case scenario.

It's just a thematic element, allows for easy black-and-white morality in what is otherwise a very dirty grey system. You do have stuff like The Lion King but people b***h about how contradictory it all is too.
Realistically it'd be the other way around. Herbivores are incredibly stupid. I can only assume its always some dumb form of moralism by humans somehow thinking the relative docility of herbivores is more human than the way of predators when that too is false.

It’s such a weird situation in all talking animal universes. The predators are just doomed to have to kill people so I guess they’re forced to develop some mental gymnastics that make it ok, they either try not to think about it or become culturally racist and gleefully enjoy it, what other option do they have. Or they genuinely become a species of psychopaths because those are the only ones who can live with themselves and survive?
Not really? Humans are perfectly fine being very arbitrary and doing nasty stuff to other humans and animals just by declaring that "they aren't similar to us".

It probably doesn't help that she's very much a prologue villain, she's basically Tarzan ascending to the expectation of Tarzan. But if she has an actual character it might be weird to just kind of cast her aside after the first half of the movie. If she's dismissed as a savage beast it's just a thing for Tarzan to overcome, if she's an actual "person" people might want her to be the true confrontation Tarzan overcomes. Also it'd really make it'd shift her eating the Kala's baby and Tarzan's parents from predation to straight up murder. It'd be like if Shere Khan just got shanked midJungle Book and the rest was about Louie or some shit.
Though I'm also imagining the probable frequent threads about Sabor if she was fully voiced. It's disturbing
