GT has better music and production values due to the superior time period that it was made. Super is generally a lot more watchable, however.

I have never watched Dragon Ball Z in my life, but it looks mediocre just from the things I know about it. I get the impression that it's basically soap opera pro-wrestling but even more fake.
I think Dragon Ball Z is one of those shows where you had to have grown up with it to enjoy it as an adult

Absolutely not.
No, he's really not.
Super has a ton of issues of its own, but Tournament of Power was never as much of a slog as GT's major battles. It was all the worst aspects of Z, generic drawn-out battles with very little happening and new boring one-note villains that got shittier and shittier with each one. Oh and nobody but Goku (and Vegeta near the end) ever being allowed to do anything major. WHO the frick has fun watching Gohan, Trunks, Oob, Pan and everyone gang up on Omega Shenron and then lose immediately? Who the frick actually gets excited and hyped from this? Wow, the secondary jobbers jobbed, so unpredictable. And yes, Jiren was bad too, but with him people besides Goku were actually allowed to contribute.
I'll be honest, I like GT for the same reason I liked DB over Z- there's an actual sense of adventure to it, instead of just being a fight comp that forced them to only have barren empty landscapes.
Then again, I was one of those weirdos who spent a decade being shunned by 'real' Dragonball fans because I actually liked the Garlic Jr saga. I also liked the Ocean dub instead of slobbering over Sean's knob, but that's irrelevant.
