When you have to rely on writing, acting, pacing, and nuance in order to create something great you will always make something that stands the test of time. If you move all your budget to CGI and effects, you start to get beautiful CGI vista's but all the actors look like they want to kill themselves and everyone starts wearing gothic black. Seriously, go look at how everyone was dressed in S1 and then go check how they are dressed in S6-7, it's a fricking joke.
Early seasons GoT looked better though. The costumes were more varied, sets had some tender love and care put into them, and you could actually see what the frick is going on. All the budget went into actors being greedy, CGI, and a thousand extras fumbling around in complete darkness..

The ambiguity of events/unreliable narrator of course will be ignored, which was one of the few interesting elements of Fire and Blood, but you simply can't do it in a GOT type show.
They also don't have the crutch of George's dialogue because the book has almost no dialogue.
