I think diners are good for seeing how characters interact with "low" food and "low" people. It also frequently juxtapositions their narrative importance/intense costuming against the plainness of a diner. You get to see how they eat, what they eat, and how they deal with servers. And have downtime to talk to each other instead of some gun fight.
