Easy way for the writers to spruce up a cast of mecha pilots (since they're the ones who solve anything in a setting) without having to put in the effort to really make each male pilot stand out to differentiate them from each other.
It's a metaphor for the lead male pilot or charlie type's personalities.
Because the ideal woman is one that can pilot a mech effectively.
