In the book they generally ride them until they're so tired that they just sink down into the sands to take a nap and so yes they don't particularly like being up top like .
You can control their orientation by pulling back scales so presumably they just rotate themselves near the ground and hop off. IIRC, it's not mentioned explicitly in the books. Worm riding is actually pretty unimportant to the story
That jumped out at me when I finally read the book. All these years I thought worm riding was a huge part of the story. The scene is actually pretty short with little buildup, and is mostly just meant as bonding moment between Paul and Stilgar.

Every question about the worms would be easily answered by the floating devices everyone uses, but the Fremen don't use them for some reason. Those things possibly look even more OP than shields.
Doesn't the hook pull the scale outward too so the worm rolls as to not expose its inner skin to the sand and generally makes the worm physically uncomfortable and disinterested in feeding till it recovers?

so do they have to keep circling if they want to stop somewhere specific?
I think you'd only be using worms for long, treacherous journeys, if it's a smaller distance you'd either walk or use an ornithopter.

In theory, the rider drops a rope down the side of the worm and dismounts using that.
i was mostly confused when his mom and 100 other random people appeared on top of the worm after a jump cut
