Unfortunately will never happen. A main character will never die in a kids movie. They need to keep the status quo to squeeze money out of them for spinoffs and toys.

Death gets everyone in the end. Puss was actively struggling against his own inevitable demise with trying to make the wish, ergo he was fighting Death.
Po's been to the Spirit Realm and was basically accepting of his stay there until being called back to the Mortal Realm. He'd probably be pretty understanding if Death showed up for him.
They'll find some convoluted way to sideline him, like how in Shrek 3 he swapped bodies with Donkey, and in Shrek 4 he was fat in the alternate timeline.
The Last Wish is pure kino but it's clear they gave him a massive power boost for the film to work.
Shrek has mostly treated Puss as a joke character from Shrek defeating him fairly easily to him being a fat slob in the fourth film. Puss as an actual competent hero wasn't a thing until his own movie.
You could make an argument this is just him growing as a hero: Shrek 2 being him in his very early years after being framed by Humpty Dumpty and the spin-off films being some years later after presumebly some adventures with Shrek. But as already mentioned it's unlikely they will make him this competent in Shrek's movie unless he just barely shows up at all.

the reason he was hired by king harold in the first place is because he was the only one even willing to fight an ogre

Shrek movies arent about action like the Puss movies are. He will definitely be more cautious in his actions though, now that he understands the value of life.
OP it's literally impossible to beat death in the Shrek-verse unless your fairy tale or nursery rhyme involved coming back to life/being immortal
When you think about it, Shrek basically managed to come back from the dead in Shrek 4. Or from non-existence I guess, but same thing.
It goes without sayng that Puss will be toned down because he is not the protagonist, so he cannot eclipse Shrek during a Shrek movie.

What about Po (post Kung Fu Panda 3) vs Death (straight up)
Po would greet Death with respect and accept his fate since he knows that wolf is only there to do his job. As much, Po would politely ask Death for some extra minutes to say farewell to his friends and loved ones, and maybe to grab some snacks for the road. The wolf would not accept this, but after some respectful jabs from Master Oogwai, he would sigh and say okay, but only if Po brings him some ramen and crackers.
The Furious Five would later arrive to find Po's lifeless body, peacefully lying on the ground with a faint smile on his face. A tasty bamboo patch would later grow in the same place where Po died, and it's said that every year a strange wolf arrives to Po's old ramen store to ask for a single bowl of bamboo ramen to eat before going away who knows where.
Po has transcend death and will leave on his own accord when he is ready just like the turtle did
