Every time this question gets asked, I think about things I'd change and eventually come to the same conclusion: you'd basically have to rewrite the whole thing. Not because everything in LoK is necessarily bad and needs to get reworked, but because the biggest issues with it run deep and you can't neatly fix them without effectively changing the whole story in the process. It's not like AtLA where you could probably just tweak some plot threads in S3 and then completely rewrite the finale and call it a day.

Ive thought alot about all the different plot elements they introduce and how they all technically fit together really well, but the issue is those things were not introduced at the same time which makes it all feel disjointed. Anyway I'm doing a Korra rewrite fanfic now after seeing some absolutely dogshit takes on how you could "fix" the Korra story.
