If Star Wars was only meant to be one movie explain why they "waste" time with showing Luke being taught about the lightsaber and then never actually using it in the first movie. Just because everyone expected the first one to fail doesn't mean that Lucas didn't have the rest of the story planned.

My dad is the only boomer I know who genuinely hates this retcon. Ask him about Star Wars and he'll say it was a good movie in the 70s that was immediately ruined by stuff like Darth Vader being Luke's father. He doesn't like five or six, he doesn't like the prequels (though he did bring us to them when we were kids) and he never watched the sequels or Disney shows.
