I think Poker was great in RDR2 too and I spent a lot of time playing it. I actually played it whenever possible because the AI is dumb and easy to beat.
I'm pretty sure I figured out that they will always call if you 3 bet shove (meaning, you go all in after they raise) and that's extremely exploitable because if you have a good hand then you can just go all in if you see them raise and win all their money.
What don't you understand about Poker? Just look up the hand rankings online because understanding what you have or what you have and what you might have on the turn or river is the most important thing.

The skill in Poker comes into play when you understand that even if someone goes all in with 10% to win and wins, that'll only happen 10% of the time and the good players want their % to win much higher so the skill in Poker is either trying to make sure your % to win is high (playing good hands) or winning with a shit hand by bluffing.
