Anakin betrayed the Jedi because he had to hide the existence of his wife from them, and Palpatine was at least (pretending) to be on his side. The only reason he was with the Jedi to begin with was because of being adopted into their order, and since Qui-Gon was assassinated for the sole purpose of preventing Anakin from having an actual father figure and an intelligent teacher, Sidious got to him and only fed his character flaws for over 10 years, in a time where he would've been confused and conflicted even without outside influence
The novel (which was entirely canon and vetted by George/ based on the movie script before israelitesney takeover for the record) also makes it blatantly clear that Darth Vader was already harboring thoughts of killing Sidious by the time he was on Mustafar, drunk on his dark side spree and finally feeling liberated from having to necessarily be beholden to anyone except Padme herself

And I'll add to this that you don't even need the novel for this, he literally explains it to Padme in an utopistic fervor about their future since he's so off the deep end and drunk on finally being free to enact his will on the world that has kept him psychologically and physically restrained for the majority of his life. Sidious selling Anakin snake oil was basically just giving him car keys that he was asking for while he was already drunk
The ROS novel is probably my favorite SW book and infortunatly it add almost nothing to Anakin's turn to the dark side, we just learn that he was pissed that he couldn't access the Temple's archives but nothing more

Yeah, he was just wanted to see if the Jedi had some sort of secret healing powers for pregnant women or whatever. Literally all he had to do tell her to take a bacta tank since that stuff can basically bring you back from near death in about 20 minutes. I don’t get why of all the possible plans he could’ve gone with, he went with the one that involved trusting his wife’s health in the hands of someone who has tried to kill her multiple time.

During their conversation in his office when he finaly tells Anakin that he's Sidious he explicitly declares that he has the power to save Padme
And then like 5 minutes later he says something along the lines, “we’ll actually I don’t know how to do it but if you go kill your friends and family one day we will find out how to save your wife.” Why does he keep trusting a man who is blatantly yanking his chain again and again? A man who is part of an order infamous for lies and deception and since its inception has done nothing but cause misery and pain to both its members and victims.
