Basic plot is that the MCs (Hinako, an isekaied rich girl and Elis, a giant) are searching for people close to them. Hinako is looking for her ex-lover (Junko) and Elis is looking for her clan and you learn that it's for revenge as Elis' clan tried to kill her by throwing her off a cliff and Junko is a manipulative, self-absorbed sociopath who was funneling girls from the school into a compensated dating scheme. Hinako ended up isekaied because in a murder-suicide after finding this out and pushing Junko in front of a train. Hinako is a moral person but her morality is incredibly black and white and rigid because she's explicitly Christian and has a very Old Testament mentality towards good and bad while also being consumed with hatred and vengeance towards Junko. She's also missing her left arm and her body is scarred up because she constatly puts herself in danger despite having no combat ability and having rejected any kind of cheat.
Elis was found by Hinako after being abandoned and is extremely protective of her. She more or less doesn't really care about anything but Hinako and protecting her. She's also a mage and the way magic works in universe means she's pretty much a walking nuke due to being a magic-using giant. She'd otherwise let the world burn. She's also the giant equivalent of Uncle Ruckus; she loathes giants as a race and sees them as worthless, violent savages. She basically all but outright calls them nigs (giants in the setting are based on native americans).
The people of the isekai world are used to Otherworlders and manipulate them for their own ends while seeing them as less than human and human trafficking them for their body parts and chear abilities is common. There's also a sci-fi element going on to the setting as the capital is built around a crashed spaceship, and the "goddess" is more like an AI.

I used to read vinland saga shortly after it started, i liked it but it didn't grip me like some other series did, cyberpunk edgerunners wasn't terrible but wasn't good either and it certainly didn't deserve all the praise it got. I've read goblin slayer as well years ago but it was subpar, like a lot of modern releases it relied too much on shock value to keep the reader/viewer engaged while having little substance.
I'll give some of your suggestions a try but i'm not holding my breath, i've tried modern anime and left disappointed almost every time. Lately the only mangas i've liked were chainsaw man and dungeon meshi.

I thought it was original and fun, mainly in the way the story is told and how the characters are portrayed. I didn't like fire punch because i thought it was too disjointed, incoherent and edgy for its own sake, but the author seemed to correct these issues with chainsaw man while also keeping what made his stories compelling, this kind of unhinged weirdness and violence mixed with humor.

Explains why some of those I've watched have a protagonist that is unusually empathetic and kind to everyone around them or otherwise becomes such - perhaps the creators of those isekais made them with that in mind, hoping to condition the kind of people who are addicts to that kind of story try to be more personable and understanding.
I guess a way to put it would be that even in the worst western media,
a characters arc is usually about self honesty and their inner moral voice, the task of becoming a better person and learning. With a lot of japanese stuff its almost like they have no concept of that,
and a good world is not one where individuals become good, but where everyone gets what they want so nobody has to be cruel to get what they want, and being a good friend is more being polite than pushing someone to be better.
I haven't seen every isekai ever nor do I plan to, but here's a couple examples: Rising of the Shield Hero - a very rude and antisocial protagonist gradually becomes more empathetic to others , or Danmachi (technically not an isekai but functionally identical to one) - the protagonist is ridiculously kind and caring to begin with. There are many others like both, so I wouldn't say the concept is foreign to the japs.

I watched Enchanted recently, a Disney movie from 2007 after I discovered it randomly. It somehow went under my radar completely up till now. It starts of as a classical 2d animated Disney story but then the evil queen reverse isekais the princess into the real world at which point it turns into a regular movie with real life actors. Its more geared for a younger audience but it had a handful of great jokes and Amy Adams fricking nails the lead role.
I think I watched that at the cinema on a girl friend's birthday.
Isekai can be ok, I guess, but I wish it was less popular and straight fantasy more popular. I'm generally not a fan of the whole "person originated on Earth" deal because it reduces my immersion and also kind of takes away a lot of the potential... I don't know, gravitas? legitimacy? that you could have with a fictional setting that doesn't have that gimmick. Aside from that, the worlds portrayed in isekai often too closely follow this weird generic D&D-MMO-ish setting that's not particularly believable or well-made.
Konosuba's the only isekai that I'd consider great, and it works because it's a comedy.

Technically this often happens in the sub-genre of isekai to an MMO world. Because messing around with the game world is a big part of the theme.
In Log Horizon (which is only truly good for 1 season unfortunately) this is not only a plot theme but a main one and they lean into it heavily. Which imo is a lot of fun. The players increasingly transform the MMO world with their meta knowledge. Cultural and sociological shifts happen. The NPC kingdoms increasingly fear and resent the isekaied hero characters and their PC nations. It's the whole package with him being super strong and super handsome and a genius at literally everything and then you also get the awkward feeling bits where the guy is supposed to act humble but the whole framing of the show even turns those moments into narcissistic power fantasy stuff.
