Why did they need to capture and torture Gollum for info on the ring, and why did the Nazgul need to stop and ask people "Shire, Baggins", when Sauron could have seen exactly where the ring was whenever Bilbo put it on?
Because the movies overdid the whole "Sauron/the Nazgul can see you when you put the Ring on" point to make things more dramatic, at the cost of making the logic more questionable.
Same thing with the Nazgul that sees Frodo with the Ring at Osgiliath, it's an epic and tense scene - but it should lead Sauron to act differently than he does in the source material where this encounter doesn't happen. And yet Sauron still seems to think Aragorn has the Ring, like in the books.
It's not a great leap to think "a Halfling had the Ring at Osgiliath and now Aragorn has it." It IS a great leap to think, around the same approximate time, that Pipin is the same halfling but he's chatting with you via Saruman's palantir, though.
Because Sauron was redeeming the google store code before the events of the first movie. He had no strength to look anywhere, his influence was slowly growing until the eye materialized.

He personally tortures Gollum, who sees he is missing a finger. There are also numerous mentions of him sitting upon his throne and whiling away time in Barad-dur, and mentions of wraiths etc being brought before him
Though the eye in the movie doesn't preclude him having a physical form. You see his physical form briefly when he converses with aragorn through the palantir
It's not actually a part of the book, but when Gollum hears about the ring being cut off his hand he remembers being tortured by him personally and that his hand only had 4 fingers.
They were ghosts because they broke their oath to battle against the forces of Sauron. Aragorn gives them another opportunity to fight for Gondor, which they do, Gondor has been defended, and thus their oath is fulfilled and they are free to go. It's all about honour and integrity. Aragorn can't exactly enslave them to his cause indefinitely or he'd be no better than them, or Sauron.
In the book the ghost army is not OP. They make Sauron's men allies flee in terror, their weapons have no bite. Aragorn uses them to free slaves and gather a small army in southwest Gondor, which he then shows up at the siege of Minis Tirith with. A much better plot, the books have much better plot and strategy.
Why didn't they rotate ring bearers? If I gave you the ring a week and you didn't want to give it back to someone else then I would know you're already compromised. It's like how multiple people have to turn locks to launch a missile.
why didn't they simply draw up a contract for ownership of the ring that was split up into separate and equal shares? That way it wouldn't matter who carried it because they still wouldn't fully own it.
