Isekai has yet to interest me, although I've only ever gotten to like the first or second episode of various slop series. Would be curious which the 'good' ones are. Fate/Stay Night? What else should I try?

You're best off watching Mushoku Tensei, it's the only isekai that feels even vaguely thought out and well written.

You could try Frieren (not actual isekai but a similar setting) or Solo Leveling
That's interesting, perusing titles I have noticed there seem to be lots of isekai currently but then also a lot of stuff that looks like isekai in that it is about fantasy adventurers and maybe parodies rpg tropes, but isn't technically isekai in that the main character wasn't ported to that world from the real world.
Not sure what those other types of shows are other than I guess like fantasy adventure or in some cases slice-of-life fantasy?

The trick to Fate/stay night is playing the visual novel, ideally all three routes (the story changes dramatically and gets quite dark/deep). The adaptations are nowhere near as good.

Fate is a good series. The original Fate/stay night anime isn't great, but I would say Fate/stay night: Unlimited Bladeworks, Fate/stay night: Heaven's Feel, and Fate/Zero are all top notch storytelling.
Will have to check it out then. My other favorite animes are based on visual novels so perhaps there's some similar quality I'll like about it

Glancing over these isekai titles, yeah, it does seem like they just took the harem or vaguely fanservice-y slice-of-life model with lots of cute girls and a hapless high school main character and just ported it into a fantasy setting.
