Well, I'd change a few things. For starters, I'd have given "My Life as a Teenage Robot" a series finale where all the XJ Sisters live happily ever after. I would have finished the series "The Pirates of Dark Water" too, that shit was badass and they still had 5 more Treasures of Rule to find. I'd also have made a cliffhanger at the end of "Batman Beyond" so that there were more Joker Chips implanted in random people around the world, so the Joker would never truly be dead.
I would keep this as an episodic series and never allow any serialized elements to be introduced. The fandom will be smaller but the show will be vastly improved

I would remove the Steven perspective rule from Steven Universe. I really liked the stuff focusing on the gems in the early seasons but the fat kid always having to be at the center of everything really took the wind out of the sails especially as the series went on.

The Steven perspective rule really work on the first seasons when we were discovering the story and origin of the gems at the same time as Steven. But the show would've really favored from some variety. I know this might be kind of an unpopular opinion but I really liked a lot of the Adventure Time episodes that didn't focused on Finn or Jake (Even if they really dropped in quality on the later seasons).
But it would've killed Rebecca Sugar to have an episode focused on Lars's life as a space pirate or an episode dedicated to rebel gems in the homeworld? Also more Yellow Pearl

The whole idea that the death of Jake fricked up Finn so much that he spent more than half of his entire life just waiting to die to meet with Jake in the land of the dead sucks. When he arrives, he also decides to look like his teen self almost telling the audience that after AT's finale Finn's life just went completely down south. He died an old man alone no wife or kids to speak of. Maybe in season 2 of Fionna and Cake they might show us that he actually did manage to start a family. But if he did, he really didn't fricking care about them and the only thing he thought of after dying was to get back with his brother to relive his glory days when he was 16 years old. Just depressing. Why did the writers hate Finn so much?
