Well, it was that and because he saw Dooku as old and busted and wanted to trade him in for Anakin. Dooku likely genuinely wasn’t expecting the betrayal at that moment, which is why he was so shocked into silence. You can see it in his face right before he gets decapitated that he knows he’s fricked. Also, he was probably in immense pain from getting both his hands cut off too.
Sifo-Diyas was likely manipulated by Sidious into commissioning the army. He was killed by Sidious after the fact to keep his connection to the whole affair hush-hush.

If Sifo-Dyas commisioned the army, how can there be something like order 66 in the programming of the clones? He would have had to agree to that right? But he's a Jedi, he wouldn't have wanted that to be a feature

Its not so suspicous when you take a look at all the other orders the clones had implanted in them. Order 65 had the clones removing the chancellour by force if he was voted unfit to lead by the senate but tried to maintain power.
But who had the authority to issue these orders? Wouldn't a chancellor have to issue order 65?
In that case it was a senate supermajority or the top military council.
The orders can come for different people depending on what it is. For exmaple 65 could only be issued a senate with majority vote. 66 could only be personally ordered by the chancellor, I guess as added security against possible abuse. Though that doesnt work so well when the chancellor himself is the enemy.
Why didn't Obi-wan know who Sifo-dyas was? He was on the jedi council around 10 year pre AOTC. Obi-wan would definitely been an adult then. Why would a jedi not know whose on the high council?

Trick. It's the same as the scene with Darth Vader and Luke in ESB and shows how rule of two works: the sith constantly trying to gang up on their master and take power. Dooku was a Sith Lord, he was corrupt, and he wanted power for himself.

He was serious. Dooku was never really into the Sith ideology, he legitimately wanted to improve the galaxy. That is, for him power was just a means to an end, while for Palpatine it was the end in itself.

It was the original planned choreography made by the stunt team. Then during the day of the shooting, George Lucas decided to throw it out and change it.
The original plan was to CGI Palpatine's face on a stunt member like they did for Episode 2. But then George Lucas showed up, changed his mind, and made Palpatine's actor (who was in his 50s) learn new choreography with 15 minutes of Practice. Lucas thought that the CGI wasn't good enough and wanted the real actors to learn to do it themselves.
