I pretty much started watching all of these just for Spider-Man. I want to be able to keep up with the story in the three MCU Spider-Man movies but considering I see that Doctor Strange is in them I need to watch everything else first in order I guess
Not really. Spider-Man"s plot is just Civil-War, Infinity War, Endgame and the trilogy.

You forgot Wandavision despite it being the second best entry. Also Cinemaphile seems to hate Loki but it's good (at least season 1. I don't have Disney plus anymore).
They get bad after Iron Man
The movies are pretty enjoyable. They don't get consistently bad until Multiverse of Madness. Even then they aren't actually bad movies. Just incredibly mid with no direction.

The MCU Spider-Man flicks range from bad to downright shit.
Homecoming is one of the worst spider flicks I've ever watched. Bad CGI, casting, unrecognisable supporting characters, bad acting and possibly THE WORST casting in the history of cinema. That ugly nog Zendaya as attractive redhead MJ. Frick that piece of shit flick.
The Holland flicks were carried hard by iron man, MCU shared universe and nostalgia bait respectively. Plus, Holland can't act if his life depended on it.
It makes even TASM 2 look like a masterpiece in comparison.

I've only ever watched the first two iron man's, first captain America and doct9r strange. Was a huge marvel cartoon kid but movies not so much
Thor (Branagh) and Doctor Strange are good, Guardians of the Galaxy, Winter Soldier, Infinity War and Endgame are okay. Surprisingly I didn't hate Wakanda Forever, Love and Thunder and Multiverse of Madness. Didn't care for the rest.
