This is a blatant and pretty shit way to reference a great anime film but I don’t think there is anything fundamentally wrong with being inspired by anime but that its being lazy with references that is. Hell, anime was inspired by Disney so should we attack it as well?

It isn't by today's standards but 20 years ago, the only anime you would see referenced would be DBZ, Pokemon, and Sailor Moon
For a pretty long time, Eva was one of those "in and out of niche" based solely on how hard it was to get for a while.
A real niche anime is Peach girl or Hare + Guu not Eva. That anime still had a big fanbase, big enough you'd see actual cosplays for it even way back when.
