No, it was fricking stupid. Why did having a panic attack and fearing death give Shiro a last second battle shounen power-up so he could surprise Norris who was literally on guard and ready for everything up until that point? Feels stupid. Hesitating and letting your emotions get the best of you shouldn't be depicted as a good thing.

Yes it is. You literally see him hesitate in his wienerpit and let the fear of death take over, then he starts wailing like a moron and it's presented as the edge he needed to best a calm and collected soldier.

Sure, except for the part where he's not wailing and that it isn't 'presented as the edge he needed to best a calm and collected soldier', since Norris blocks the arm perfectly. Shiro lands a single hit when he catches him off guard mentioning marrying Aina, which lasts a moment and does not win him the fight.
Norris decides that earlier, which is why he fired off that red flare, and frankly he probably had it in mind from the moment he decided to deploy again. His conversation with Aina in the hangar certainly implies it.

That isn't what happened at all.
If this was your take away of the fight then you definitely owe yourself a rewatch. There are a lot of little details that really characterize Norris's fighting style.
Probably the most telling moment that foreshadows the ending of the fight is the moment before the supposed anime protagonist power up: Norris fires his extendable cable/heat rod at Shiro. Shiro dodges the whip and begins to pull his hand off- but then they show the cable grabbing Norris's sword; Shiro was never the intended target of Norris. That each combatant had different goals and different methods of getting there; while almost ultimately wanting the same thing is what makes the fight interesting. This isn't Gohan vs Cell or anything.
You can see that the only time Norris is caught off guard is when Shiro is screaming how he loves the woman Norris is supposed to protect through the intercom. Its a very brief detail but you see him block the arm flail with ease- and then only when Shiro yells this one piece of information do you see Norris lower his guard for a moment.
And its not a super secret Unicorn gundam weapon, its not the Anti Zeon-Anti Ace super software that only Shiro's UNDERSTANDING can operate; and its not a spinal implant that 1:1 coordinates the Ez8's movements with your intentions: he just rips off his own arm in sheer desperation and then b***h slaps Norris with it.
Its not even the move that wins the fight; its just a single disorientating slap that Norris ultimately recovers from shortly after.
At the end Norris doesn't even technically *lose* the fight; he accomplishes the removal of the Federation anti-air and manages to preserve the life of Aina's boyfriend at the same time. His death is something that he chose as a tool to "win"

Yes. That's not really itself that ridiculous - it's not calibrated for small targets and he's close enough for relatively short movements to get out of its firing line. The pressure should've at least knocked him flying, though.

It's a really cool fight at first glance, but gets less cool the more you look closer and nitpick the details. Which is a lesson to not actually do that, because in that case all you've done is cuck yourself out of a really cool fight.
I didn't need to look close to think the oil blood spray and the Gouf having Spider-man tier maneuverability seemed kind of over-the-top and silly for what is often pushed as the gritty, down to earth war drama Gundam.

But that's really not what 08th MS is going for. It's the conclusion people draw just from watching the OP, and then selectively ignoring large chunks of the series proper
calling gundam a purely gritty down to earth war drama was always a mistake when the 79 anime recycled animation leading to scenes like the gundam vaulting off of nothing in space. It was always presented as slightly fantastical action on a more-grounded supply/battle damage framework. This is partially why I prefer the TV anime to the movies, and I think 08MS's presentation was the logical endpoint of that approach.
Honestly, every time someone has a sperg thread about this fight, it makes me watch it and appreciate it more.
It's a well-done fight with the right amount of real-life heft to send it over the edge. It's earned its spot at being considered the best.

The mobile suits flew around too much for my tastes but it was still really good. The Albion also traveled the planet too much to develop the ground conbat setting. 08th felt like every inch of soil was fought for. 0083 would frick off to their whitesu baseu and appear on th3 other side of the planet two episodes later.

That was my issue, the Guntanks didn't reposition and consolidate into a more defensible position and the whole squad was doing some real dumb rookie shit and losing their composure way too easily.

The middle of Gundam had a lot of interesting grunt fights, a shame they got cut out of the films. I always think about the one gouf right before the Tri-Stars episode who does a flip off an exploding dodai and goes for a falling stab on the gundam

Nothing directly replaces the Guntank. The OYW had a shitton of specialized variant MS for different roles and terrains, but it largely disappears after the OYW. There are still some MS geared towards a fire support role, but they are pretty much all beam weapons and not for indirect artillery fire. The closest thing to a Guntank replacement is maybe the Loto since it can equip old fashioned projectile cannons.
That, or the Xamel.

Full Armor Gundam (Thunderbolt version) vs. Psycho Zaku Mk. II
It's good. The one against the Magella tanks is good too. I also like the zakus in the village fight despite the unrealistic rocket effects and side stepping a zaku machine gun bits. Nice heavy stompy giant mecha ground combat. 0083 is peak space battle for me also. 0079 and Zeta a great stories but the world building sucks and everything looks and moves like shit. Tomino Gundam for story time and non Tomino for cool shit happening on screen.
