Link to the Past and Ocarina of Time. Only ones you need to play. Original is a classic, but LttP does it except way better.
Assuming you want a 3d game, Ocarina of Time is the perfect place to start.
But Wind Waker and Twilight Princess were both designed to be accessible by newcomers and are very tight (you'll just miss a lot of references to OOT).
Skyward Sword is underrated but I wouldn't start with it.
Breath of the Wild is fricking fantastic but it's so different to previous entries that again, it's probably not the best starting place.
And Majora's Mask should only be played after you've played the shit out of OOT

You could start with just about any game in the series though, honestly. Not very many of the games are direct sequels to earlier games. OoT has a sequel (Majora's Mask), A Link to the Past has a sequel (A Link Between Worlds), and Wind Waker has two sequels (Phantom Hourglass and Spirit Tracks). Just about every other game in the series besides those sequels tells a self-contained story.

BotW proved, in stunning low quality and with zero effort, that Ganondorf and Zelda are largely irrelevant to the story. They're pretty much just there because the brand became popular 25 years ago, not because of them, but they just happened to be there. So now they're just there, because they need something to do.

Link and Zelda are most often kids not adults. The oldest they ever were is in TOTK where they are like 22 or something. Most games have them as around 10 years old. OOT and TP has them as 17-18 years old. Ganondorf is depicted as being in his 20s or 30s. So any Zelda movie is going to have Generation Alpha actors for Link and Zelda and possibly a zoomer for Ganondorf if they are going to have him in his 20s.
