What if the Mud Gate is manned by decoys, who were meant to lure the Stannis' forces in and then destroy the gate itself once the seige forces had overtaken them? Destroying it once and for all and rebuilding it would be both effective and cheaper than the entire city being sacked.

Its the appeal of GOT- realistic medieval warfare in a fantasy world. The fact that 8 seasons of build up ends in a slightly longer episode is insulting to anyone who was still invested in this shit.
Realistically they would have retreated to Eyrie or the Neck as fortified positions to fight the undead army. Maybe evacuate King's Landing and set a trap with the wildfire for them.
