It's the easiest motive to write so there tends to be a LOT of them. And there's even more of them when you count villains whose original motives fell to the wayside/got resolved and all that's left are them lusting after the hero.

Plastique doesn't count since she actually married Nate due to them having a normal relationship.
Angle Man's attraction to Donna isn't a motivation for him; he rarely ever interacts with her.

Saturnyne was never a villain. That's just X-homosexual revision history. It like what they did with Beast, Firestar, and etc. And did the complete opposite with Emma Frost, Apocalypse, Magneto, Mystique, Destiny, and etc.
