It's shallow to say but I find him less interesting since he got popular.
Deadpool stories used to feel like they where set in the Marvel gutter where all the C and D listers where running around. Deadpool felt like a C-list villain who wanted to be an A-list hero, but could never get there either because of other characters plots or his own flaws. The meta was more than just a joke, but also his status as a Marvel character was woven into the story.
Now that he IS a star Marvel character, you can't go back to that. In universe he regularly runs around with the Avengers but even if you put him back, it would feel fake. He makes too much money for Marvel to not capitalise on him now.
I guess the more he grew in popularity the less authentic his story felt and his character has become pretty flanderized.
He's a weird guy who has been incredibly abused and traumatized and taken advantage of, he constantly makes jokes to cope. Read some early Deadpool and you'll get why he had such a following.
He is every edgy teenagers fanfic self insert. Hes quipy, iron poisoned, fricks anything that moves, and is an immortal badass who maims and murders people. Put him in a room with other OCs from fanfics and he would fit right in with them.
He had like, two incredible runs before Daniel Way got his hands on him and propelled him to mainstream "greatness." Somehow he even got another very good one in the 2010s, which is kind of ridiculous considering what some characters get.
He was early on the "sad clown, meta humor" archetype before that went everywhere. The best Deadpool stories contrast the comedy with him genuinely having some tragic moments.

He's simply a man that has been given a shit hand by life. To a cartoonish extent, even. A traumatic childhood to an even worse adulthood then the mf gets cancer, and THEN gets SUPER CANCER from an experiment that will just not let him die.
So what does he do? He keeps going. He has no other choice. So why not try to enjoy the ride?
His original monthly was great. Schlocky in the right places, but always underlined by how Wade was a completely broken person whose actions have pushed him beyond deserving sympathy despite always wanting to be better. Like here's a contract killer who gets mortified that his one chance to be called a hero is to murder someone, but then he's also a complete shitbag that tortures an old woman and it gets absolutely deplorable. Makes him interesting to read, as there's layers to wanting him to succeed but also gratification to seeing him fail.
But that's not why people like him. They like him because Way's run appealed hard to wacky internet morons that would share panels and pages of it with other band geeks on tumblr
Did you ever see the medical show House he's funny and yet he's tragic at the same time that's what people like about him they know what he's doing wrong he knows what he's doing something wrong but you want to laugh and root for the guy because the people he's doing it too are worse than what he's doing.
