Betty was absolutely interested in Jimmy. She pounced on him basically every time she appeared in the show.
She simply bowed out once Cindy started getting territorial.
She actually liked Jimmy even then. She “liked” Nick because it was the socially acceptable thing to do.

Real reason is they kinda changed a lot of character designs between seasons, some veeery subtly, others more obviously
They could afford to change her cause she wasn't super focal and they presumably learned to model other hairstyles so they gave her a revamp
In universe reason is they had some kinda weird ass Yugioh episode where they learned about some anchuent prophecy or some shit and she changed her hair to look after some ancient Egyptian girl in the prophecy

It's an okay show. The dialogue is decently written and the characters are endearing.
The second and third seasons are better because Cindy and Libby join the group and the five of them more of less become a team.
I find the show to be more enjoyable than the movie. I don't know how much it holds up for someone watching it for the first time in 2023, but if you have the urge to watch and the appreciation for cartoons of that period there's a decent chance you'll have a good time. There's a reason the characters have persisted in the memory if popular culture.
Jimmy Neutron works with the "invention of the week" format of the show. The movie was kinda meh.
