It gets kind of soap-opera-ish the further you delve into the sequels, but they're worth a watch.
It's kind of like a fricked up version of CSI.
Definitely watch 2.
Like the other anon said the plot becomes "soap opera-ish" starting in 3, worth watching up to 6 or 7 if you end up enjoying that like I did.
Seconding this. 2 is a huge fan favorite, you can't go wrong with it if you liked the first. I like all the movies, there are some ups and downs as you keep going along but there's really no "bad" Saw movie. Except Spiral, which I do not count as part of the series.

The Saw movies are good until you realize that Jigsaw is not breaking any laws and can't legally be prosecuted. The films are basically people committing suicide while an old guy watches them.

Attempted murder of Tapp by slashing his throat
Led Sing into a boobytrapped room with shotguns, you can't even get away with this if it was a home invasion
Leaving Adam to die in the bathroom is a crime in many states

Ideally, you'd watch them in order, but if you can't, you can see 1 and 2. The new one takes place between those two.

Yes, this is essential to understand what's going on. The plot becomes very complex and calls back to other movies a lot.
To see X you should watch at least the first 2 or 3.
X takes place between 1 and 2 so you don't have to watch them all, but you should watch 2 to make some things a little clearer. There are minor callbacks to movies after that but nothing that'll ruin the movie.
The first one is good the rest are slop

The puppet who tells people to cut off their testicles and shit is its own separate entity and is legally distinct from John Kramer (the guy who made the puppet but is not himself the puppet). Jigsaw thought of everything.

I remember liking 2 and 3 but then the quality gradually starts to go down and the plots become more convoluted/nonsensical. The challenges become increasingly cruel and unreasonable to the point the semi-intellectual vibe it once had feels like a false promise. By 6-7 it just feels like gore porn and I'm not into that.

First two are genuinely good. After that it's a guilty pleasure for me cause it's funny to see how desperate they are to keep a guy who dies three movies in still relevant to the plot. X was surprisingly awesome.

everything past 3 is fricking garbage. I'm sorry but it's true, it's not just the plot and the traps / twists that get worse, but the way they are directed, filmed, acted, etc. is all a complete step down.
