That's what originally happened a lot back in the 90's but it quickly became apparent that the best fighting style is being able to strike with all limbs, wrestle and perform submissions. Aka modern MMA.

But being a great fighter doesn't necessarily make great film, especially a superhero/action film. There's a reason why films don't model their fights after MMA or tournament karate types.
Bruce Lee and stuntments had differences because he kept physically hurting them, how they work and Hong Kong, and the style he wanted to do didn't work well with film. One time they let him choreograph and film a fight scene and it turned out terrible so he understood more what they were saying after that.
I get why people were shocked by the scene, I think having it in the trailer added to the controversy. Bruce Lee and stuntments had differences because he kept physically hurting them, how they work and Hong Kong, and the style he wanted to do didn't work well with film. One time they let him choreograph and film a fight scene and it turned out terrible so he understood more what they were saying after that.
I get why people were shocked by the scene, I think having it in the trailer added to the controversy. But there's a few reasons why this scene isn't as insulting as many think:
