Because she's not actually Fiona the Human she's an author self insert who is inhabiting that space that is Fiona. She's not an interesting character because she literally just "30 something millennial woman wish fulfillment" the character so of course it's not an actual fun character who exists in an interesting setting but some wired self indulgent nothing burger who exist to float around actual interesting characters till eventually she just goes "man this was truly an amazing adventure" and then the show ends.
