Just like bi people who are in “straight” relationships are still bi. “Lesbian” refers to the relationship, not to the orientation of the individuals involved. Saying “woman on woman” is a mouthful and saying “bi relationship” is too vague
I liked Simone and Julie from Dofus. Simone is kind of a side character and she just shows up with Julie one episode and they go on a date and don't make a big deal out of it.

You're right that straight relationships are often shoved in arbitrarily, just because there's a male and female character so writers assume they have to frick. Ironically it's kind of gotten the same way with lesbian relationships where if you see two female friends you can safely bet that they're gonna frick sooner than later. I say it feels like a fanfic because fanfics usually twist a character and turn them into someone else for the sake of having an epic gay relationship and turn that into the focal point of the story.
It's always the lesbos that get the rep, so it's been there done that. Male gay reps are either background characters, fathers of main characters, or are a main character but don't have a love interest.
