MST3k isn't ironic. The movies there are genuinely awful. We're not talking "lol Torgo is so funny". Try watching the Dead Talk Back episode again sometime.
MST3K is a comedy. They wanted to play bad movies as fodder for jokes. The whole "watching this movie is painful" bit was just a (perfectly servicable) gag for the show's thin narrative premise. The problem is too many internet types copied the idea without wondering if it worked for the different show they were making.
It's important to note that the 'reviewers' in MST3K are characters. A robot and some bloke who got abducted by aliens. It's not presented as a review of a movie, but rather two people being forced against their will to watch bad movies for the rest of their lives.
AND the movies they would riff and joke one were legitimately unwatchably terrible films. Not like, spy kids 2 or whatever. Manos: The Hands of Fate is actually painful to try to sit through without commentary. Internet reviewers could never.
It's the same reason that the concept of MSTing fanfiction has been a perpetual thing. If you have a sufficiently bad product, it can only be improved by commentary, and there is no shortage of bad fanfiction.
The key was they wanted movies that were bad, but also watchable and great to riff on. There were actually a lot of bad movies they didn't bother putting on the show.

I agree with your interpretation but that's a lowball glass and Jay's a snob, so that's probably an untouched glass. Whiskey snobs leave the majority of the glass empty so the liquor can "breathe". Still begrudgingly present for the crossover review and planning to drink his way through it, but not necessarily already drinking.
