Literally 99.999999% of anime is supposed to be all-asian casts but none of the characters look asian
What is "Asian-looking" to you? Slant eyes and buck teeth?
I guess it’s hard to put words on but if you look at them the first intuitive guess would not be that they are Asian (cutural additions such as clothing aside). Live-action ””Ong”” looks more accurate to the cartoon than any Asian I can imagine, and if I had to make an initial knee-jerk guess then Katara and Sokka look like colonised Indians to me (which yes is in Asia, but not the Mongoloid type of Asian that they are intended to be).

well they still have the same eyes its just the eyelids that look different which most cartoons don't even draw

I really like this art style, it gives off Lilo & Stitch vibes, but I don't prefer it over what we got.
I think Avatar would have been hindered by having a more western/cartoony artstyle.

Animation is a hyper real stylized medium, most characters look racially ambiguous unless they have very obvious racial identifiers like blonde hair or afro texture hair.
There are plenty realistic art styles but they are the outliers which reinforce the rule.
Avatar characters aren't even technically asians, there are a fantastical race of humans with magic powers.
Still they have some identifiers that make them look asian.

Still most of them have bright colored eyes which is a very caucasian feature but that's used most often to signify what nationality someone is .

This is very clearly just an artistic shorthand to communicate a character's ancestry.
Sokka and Katara don't look Inuit, either.

The Earth Empire would have the geography of the Sahara and Namib Deserts, the Sahel, North African Coast, Egypt, Sudan, and the Atlas Mountains. It would be based on Carthage, Umayyad Africa, and Ancient Egypt.
The Water Tribes would be the swamp people from the show as well as Melanesians, maybe Somalis and Zanj coast as well, their geography would be the Congo River, Kalahari Swamps but itd also have tons of Archipelagos based on Madagascar, South Sea Islands, Papua and Sub-antarctic Islands all in the cold South African sea with icebergs
Fire Republics geography would be heavily volcanic, theyd also have the Sahara desert as well as Afaria and Lake Assal as well as all those other acid lakes. Theyd also have the thickest jungles since Fire = Life or whatever. Culture would be West african slaver kingdoms, theyd have the Sahel + West African knights, as well as the Zulu. Government would be similar to the city states in the Mediterranean bronze age world, with oligarchic council of elites
Air is a tricky one, theyd be based on Swaziland, Highland Ethiopia/Aksum, and Atlas Mountain Berbers, with fortresses and monasteries high in the sky. Have no idea what their culture should be, it certainly shouldnt be nomadic.
