Time to reboot
A reboot is a terrible idea for the MCU. Mostly because they will make it an in-universe reboot and not stop for a while until things are sorted out. Not to mention I doubt they're willing to "put all the toys back into the box" so your rebooted MCU will probably have legacy characters walking around earlier or an even harder push for Captain Marvel which I assume are things you don't want.
I think i want closure and the feeling that everything important from marvel histoty has already been portrayed in some capacity.
They won't give you any more closure than you probably had watching the Thanos movies
