I would think that the only kind of woman that Coop would want would be those that share his interests such as games, food, wrestling etc. Basically a female version of himself.
It costs money to animate extra characters and in an action show, badly slows down the plot. Action shows don't need love interests but sponsors are reluctant to put up the money for anything that doesn't have a "will they, won't they," vibe going.
Keep in mind these shows only have about 22 to 44 minutes per episode to tell a story AND they are trying to sell toys in many cases. Giant robot pilots likely would have groupies and or families so it's internally consistent if you hook them up just be careful about slowing down the action.
Or just make it like natural. If Coop has a significant other, make her a recurring character that is just natural part of the flow and not the main focus.
He did, but unlike Jamie he wasn't a thirsty simp. He was also a nice guy, so he wouldn't be putting the moves on someone during an alien fight, and the rest of his time is in the junkyard and playing vidya.
