It's more absurd because the Flying Dutchman fits with the nautical theme, it's part of seafarer lore. It fits with the sea theming Spongebob has. Nosferatu has nothing to do with the show's nautical/pirate/Hawaiian aesthetic and only serves as a call-back to a quick gag from an episode from season 2 that was blown out of proportion for the sake of fanservice, nobody was asking them to bring back Nosferatu, much less give him a major starring role.

From what I've seen of seasons 11 and 12, this show is unwatchable purely because of the animation. It feels like they're trying to go back to the first couple seasons which are famous for when characters would go off-model sometimes. Now it seems like they're rarely on-model, they're so cartoony and stretchy and it feels like Ren and Stimpy, which just doesn't fit the kind of show Spongebob is. It worked in the past because it was restrained, and the rest of the show was consistent, visually. Now it's just unpleasant to watch, and that's not even getting into how bad the writing is.
