Insane guy x Insane girl is always a good pair. Also helps that whenever they get into arguments it's more comedic and non-serious. Like Stan and Franny never have Peter and Lois-tier yelling/fighting or Homer and Marge-styled "This person is literally perfect and better than my husband/wife, should I cheat on them?" episodes.
Plus they both could beat up anyone.
She is an actual character. She can be a bawd, a b***h, a naive mother, a psychopath. She knows she is pretty and sexy. Somehow all of that is part of who she is in a credible way. It is unusual in comedy shows to have a character like that.
For example Marge Simpson can be a naive mother and be annoyed or angry from time to time. And that is it. As a character she is boring.
