Cowboy Bebop focused too heavily on both the Style and "fixing" the characters at the expense of pretty much everything else, it was trying way too hard and pretty much everyone involved lacked the skill to pull it off properly.
This at least seems like it's going a bit more of a natural adaptation. The big question is how they do the humour. Over the Top pantomime level acting will make it unbearable but at the same time it needs to keep as much of the silliness as possible.

They could build the set with the idea of renting it as a restaurant later in mind but that's obviously way more expensive and 10 millions per episode is really not *that* much when it comes to a TV where you basically need a new set every couple episodes, so it's likely they'll spare this expense, especially since they don't know yet how popular the show will be.
The cost of fitting the ship up to code would probably be higher than simply building a new restaurant boat altogether.
I'd be surprised if there isn't already a high level of fireproofing and worst comes to worst you could make the kitchen and restrooms a disguised onshore building.
We never saw the baratie at night so it would be a cool idea that after the krieg fight they rest for a day there because if I remember correctly the events of sanji joining, the krieg fight and then the whole arlong park fight take place on the same day in the manga, the live action can fix that timeframe.

I actually the casting, sets, etc all look pretty good. And the actors and crew seem to have a lot of enthusiasm for the project. And you can tell that Oda is acrually involved because of all the white actors lel. If this was up to Netflix alone there'd be way more black actors and you know it. They're probably begging Oda to let them cast some of them as black but he's only giving them side characters and probably doesn't understand what's the deal with Americans and diversity. Oda already thinks One Piece is very diverse, but it's not you know, diverse for American standards. I actually think it's possible they'll double down and we get a season 2 (unless S1 is an unmitigated disaster like CB, but I'm leaning towards it being something like a 5/10).

Loguetown and Reverse Mountain is too much to cram into one episode. Cutting it short of Laboon would feel too disjointed. Ending at Arlong allows them to open with Smoker and Buggy's return and also saves them from having to cast Smoker, Dragon, (skinny) Alvida, Tashigi, etc
Also the ending of Arlong is hugely satisfying in itself

I actually the casting, sets, etc all look pretty good. And the actors and crew seem to have a lot of enthusiasm for the project. And you can tell that Oda is acrually involved because of all the white actors lel. If this was up to Netflix alone there'd be way more black actors and you know it. They're probably begging Oda to let them cast some of them as black but he's only giving them side characters and probably doesn't understand what's the deal with Americans and diversity. Oda already thinks One Piece is very diverse, but it's not you know, diverse for American standards. And no I'm not a fricking chud or whatever this is just what it looks like based off how the cast has been going so far. Compare this to the Witcher cast and you can tell they're having a completely different approach here. That's the difference between an author like Sapkowski who gives no shits and even if he did, he doesn't have the influence to do anything. Mangakas like Oda are the complete opposite, their word matters more that anyone's. If he says this adaptation is shit, all the fans turn on it. He can absolutely destroy this production if he wants to.
