A katana will handle like a katana. A euro longsword will handle however the maker / end user wants it to handle. Every katana I've owned/handled has been blade heavy. Every longsword I've owned/handled has been unique. Some do indeed handle like a katana too.
I.E. pic related: Left most longsword is pommel heavy with a sharply tapered blade and very quick. Point of balance is ~3" from the guard.
Longsword on the right is more blade heavy which slows it down a tish. Point of balance is ~6" from the guard.
Both the katana and ninjato handle nearly the same by having similar length, weight and point of balance.
3 of the 4 European swords in that pic weigh more than both the Japanese longswords too.

I went to a medieval castle and they had goam encased rods to do swordfighting practice with so did it with me and my bro for shits. After a while i was instinctually adopting this stance, as you could immediately block in any direction whilst also ready to strike down

It's the opposite version of high guard basically, it has the same drawbacks (i.e. limited guard/parry potential and extremely limited in the range of strike you can follow up), but it doesn't have the same reach, speed and power. You compensate for it a little by being able to conceal the timing of the strike slightly using your body, but honestly nobody would be easily fooled.
