The Soup Nazi overreacted quite a bit when Elaine showed up with his recipes. People bought soup from him because it's New York and they have shitty tiny galley kitchens that they rarely use so they eat out all the time. Also simply having a recipe doesn't mean you're going to be good at actually making the item in question. She could have published them in the New Yorker and not impacted his business. Heck, it probably would have brought in more people due to the publicity.
He was hurt by Kramer's betrayal since he was a good friend of his. Also most restaurants will probably start replicating his soup recipe meaning he won't be able to be as strict with his customers
