yes actually there's a lot of notes and scribblings. What Christopher Tolkien included in his publications is only a small portion of the most complete ones.

In the First Age, even with the support of dragons, werewolves, balrogs, etc, hundreds of thousands and even millions of orcs were needed to successfully defeat the Noldor and it took them 400 years. Also, it's not even 100% certain they were created from Elves. Tolkien seemed to be more inclined to the grown out of mud version later on.
I don't remember anything saying ancient orcs were physically different than "current" orcs. The main difference is that Morgoth was still in charge back then, so all the foul beings he created were at the peak of their power. Plus, his will drove them to fight harder and more ferociously than they otherwise would.
