Seasons 3 to 7 are the prime golden years, then it progressively gets worse and worse as the years go on. But it's still quite watchable for a bit. Like the season 11 episode with Mel Gibson

There's a dropoff after 8 but it's still fairly decent - also 11's finale is a perfect finale for the show as a whole.
Maybe watch the Sideshow Bob episode from Season 1 too.
Season 11 ends with a Behind the Music parody, and there's a joke at the end of the episode where the Simpsons win a trip to Delaware and try to look as excited as possible about such a mundane location. Then the camera zooms out to show Homer and an editor in a studio and Homer says "This'll be the last season".
Season 12 ends with the Delaware trip idealized as a real episode. Stop watching here. There's some real stinkers in seasons 9, 10, 11, and 12, but there's still some gold worth watching. Season 13 and beyond is where it becomes unwatchable background noise at the very best
