fave recipe: Mexican Chicken soup with rice
2-4lbs chicken breast
3/4 cup rice
1 quart chicken broth
1 can ranchero sauce
several jalapenos
several habaneros
*any other pepper, basically to your desired heat level. Some ghost pepper extract from a dropper works well too.
The greatness of this dish is in the garnishes: Lime, sliced avocado; chopped cilantro, and pico de gaillo.
That being said, Crab Bisque is amazing, add butter, cracked pepper
Sounds tasty anon but a little too spicy for me. I usually buy rotisserie chickens and freeze the carcasses for later use after I’ve had my fill: it’s very economical
I will anon, thanks. I usually just use paprika and it’s a shade too bland. I also use the low sodium chicken stock to try and even out the excessive salt from the chicken
Me and the wife do this with shrimp shells and make seafood stock every couple months

Try it with just some Serranos or just some mild ranchero sauce. It's actually great with just the broth.
Yes, the whole chickens are great, but pay attention to the amount of sodium. Chicken thighs are great too.
