I agree that these feelings of doubt would be appropriate for a youngling that was still in the monastarey and had never seen the outside world, but as you point out, this guy is clearly meant to be at least late teens and looks like a proper Jedi Knight (though even a Padawan should not have such doubts by the time they become an official Padawan).

Just an anecdote but my sister was born blonde and darkened as she got older but my parents have black hair.
I can't believe I had to be reminded of this, mom's brown hair, I was born blonde but it darkened to brown when I was 4. I married a blonde and our kid is blonde past 8 so I forgot it can change.
