Ver Ka means that Katoki personally supervises the design. IIRC on the previous ver Kas he would get a prototype of the kit from the engineering team and modify it himself with plastic plates and putty and send it back so they could redesign the CAD models.

Yea, I think the MK-II would get released first. Based on Katoki's MK-II he did for the Ka Signature toy line, it should look pretty cool. Hopefull he keeps the panel lines to a minimum like he did with the ZZ Ver Ka and not go crazy like he did with the Nu Ver Ka,
The MK2 2.0 along with alot of the Zeta MGs being released at that time had their line art done by him. I'm in high doubt a 3.0 kit would be as clean.

I really doubt it'd be a Seed suit. The ver.Ka line doesn't even have any AUs beyond Wing Zero EW and Wing 01. Half the line are the results of fan polls which is why all three Crossbones have ver.Ka.

They are not the results of fan polls. The suits are whatever the frick katoki feels like doing because it's his line. The suit has already been selected before the polls are conducted and it becomes just more marketing if the results happen to match up with whats already selected.

They would probably package G-Defensor with a newMK-II kit, also an excuse for higher price. I Don't think the MK-II 2.0 MG was ever released with G-Defensor, or a compatible kit sold separately for it.
